My parents have been here in the US (Visitor visa B1/B2) since January 17 2020. We have already filed for a an extension in June 2020. They are scheduled for bio-metrics on 26 October 2020. We don’t have a decision yet for their extension. With the COVID-19 situation we are unsure when they will go back.
Assuming their current request of extension is approved, can they file for another extension prior to the expiration of approval period of their current application. Please let me know

Yes, by law they are able to apply for another extension. The situation has to be dire to keep them in the country, COVID-19 of course and other potential health risks.
