EMPLOYER A NOW EMPLOYER B

I recently changed my job from employer A to B. I have a valid I-140 from employer A with priority date of November 2010 in EB2 category. In the October 2020 bulletin, my priority date has become current, but my current employer, employer B, has not started my green card process. I am thinking about asking my previous employer to provide me documents required to file AOS. Is this a feasible way and if it is then could you tell me what do I need from my previous employer?

Yes, you could do this. The previous employer has to authenticate your employment. And you will need them to confirm that through I-485J indicating that the job offer is still open.
